I had a Mimic Gun revert to its old state without picking up ammo; I think that killing a certain number of enemies or converting a certain number of bullets might also do the trick.
(06/21/2019) just did a run where i got the mimic gun for the first time, attempted to give it to the muncher chest and it denied it, stating it doesn't want that gun, should probably be updated on the page.
